Steamed Water Chestnut Cake (马蹄糕)

We made some water chestnut cake last night... We had bought the packet of water chestnut flour when we were at Toronto and only got down to using it last night...


It was quite easy to make as we just had to mix the water chestnut flour with water. Then prepare a pot of water with sugar added and boil it. When it is boiling, add a portion of the water chestnut flour mixture and stir it. Then off the fire and add the remaining mixture while stirring it constantly. This is the mixture poured into bowls for steaming...


Then we placed it into the steamer to steam it. We did not have a big container to steam the mixture, and thus had to do it in batches. We used the bamboo steamer as it allowed us to steam 2 portions a time... =p


It is done when the mixture turns transparent...


After cooling, it will be firmer and you can cut it into small pieces for serving...


It was even firmer after being in the fridge over night and tasted better... =)
