Kuih Bangkit

Since CNY is coming we wanted to bake some CNY cookies to satisfy our craving. We decided upon kuih bangkit as we both loved this cookie... =p We started on the project last night based on an online recipe that I found... Here are the ingredients that we used...

After mixing all the ingredients we had to knead it into a dough... Then we had to roll it out to a desired thickness...

Then just cut the dough to the desired shape and place them on a cookie sheet for baking. The cookies puffed up a little after baking. Ours we a little brown, probably oven too hot as the centre was not really dry yet... Our house smelled of coconut while the cookies were baking... =)

Our batch of kuih bangkit cookies... Taste wise not bad... The recipe looks easy but its actually not that easy... =p
